Cooking and baking are sometimes used interchangeably.  Baking is a type of cooking wherein the cooking of flour based foods are placed under extensive heating.  The preferred method of baking is an oven, however, there are some additional methods for baking food, minus an oven.

Historically, the oven goes way back to the world's first oven approximately when it was 6500.  This oven was discovered in the year 2014, in Croatia.  The baking of bread started in Greece around 600

B.C.  Some other pioneers in the world of baking were the Egyptians.  Their historical mark is around 2600 B.C.  They spearheaded the use of yeast in bread baking.

The traditional picture of baking was set at home, and generally done by the women.  They would be responsible for baking for the family.  Men, however, would bake commercially in both restaurants and in bakeries.  Bread is of special importance as it is a signature part of one's day to day food source.  Dating back through the ages, humans have been regular and consistent in their baking.

Looking at the cuisines of both America and Europe, one can see the significance of baking.  Without cakes, bread and pastries, cuisine looks as though something is missing as these baked items are a large part of their food choices.  Asian  countries have something called Chapati as food's most common bread.  And Chapati is one example of a simple form of baking without the use of an oven. 

When food is baked, the result is an aroma and flavor that has been enhanced.  Baking at home fills the home with the sweet aroma of freshly baked food.  The possibility of baking to make that food healthier is always possible via the baking process.  Food items that are deep fried are moving towards the baked goodness option that is much healthier. 

The old definition of white sugar, some all-purpose flour and butter all baked together is no longer a reality.  Those interested in health conscious food choices come at baking from a brand new thought process.  Some noticeable changes are whole wheat flour, baking with millets and the use of multi-grain flour.  Sugar is avoided when possible and natural sweetness is preferred.  

In addition to changes in bread, there have also been considerable changes to cakes.  Looking back historically, cakes go back to ancient times of long ago.  In fact, these type of cakes were much different than the cakes seen today.  Ancient cakes were more akin to a bread-like consistency and items like honey or sugar were then added to them.  The actual word, cake, comes from a derivative of an Old Norse word “kaka”.  According to the Oxford Dictionary, the word “cake” dates all the way back to the Thirteenth Century.

Increasing interests in baking can also be associated with a positive effect on a person's mental wellness.  While eating has been linked with anxiety, the joy and creativity of preparing food is amusingly seen as the cure.  Specifically among the generation of millennials, it was found that many are finding a passion in baking for a creative outlet, or to escape stresses.
